I turned Easter leftovers into a whole new meal this evening, taking the Curried Spinach, rice & lentils we served along side ham and veggies last night and letting it inspire a proper curry dinner. I was quite taken by the lovely pink-orange colour my slowly frying onions turned once I added Tandoori Marsala seasoning... I find that eastern spices have the ability to add not only wonderful flavour to a dish but lovely colour as well. I've included the recipe for both the shrimp and the spinach, rice and lentils here - if you're a curry lover I'm sure you'll enjoy it!
