I've been munching on the leftovers from our raclette meal for lunch over the past couple of days, and was just amazed by the colour of these baby potatoes. They have a lovely purple skin, and when I first cut into them during our dinner I was surprised that they weren't white-fleshed as I was expecting (I've had purple skinned white potatoes before), but purplish-coloured instead. Imagine my shock today when I cut into one to find it had deepened in colour to this beautiful, jewel-tone purple. How regal these little potatoes look! I'm hoping I can get a hold of more of them to make a soup with - wouldn't it be fun to sip on bright purple potato & cheese soup for dinner one evening?
